Winery Tasting Notes


Rosé Majeur displays a lovely light pink core with a delicate copper glint, enhanced by a beautiful necklace of fine and long-lasting bubbles.


On the nose, the wine reveals a seductive bouquet of red fruits (strawberries, raspberries, morello cherries…) together with warm notes of spices.


On the palate, Rosé Majeur is delicate and elegant, long and vinous, and well balanced between the strength of tannins and the smoothness of the fruit. The finish, rich and fresh, is elegant and long lasting.

Food Matching

Ayala Rosé is perfect served as an aperitif or with appetizers. It will also be superb with salmon to balance the fat or with a dessert made with red fruits, a crumble, an orange tart, or frangipane-based pastries such as the traditional French “Galette des Rois”.

Winemaking Notes

Ayala Rosé is a blend of 50% Chardonnay, 30% Pinot Noir, 10% Pinot Meunier and 10% still red wine from Mareuil-sur-Aÿ (Pinot Noir from old vines). The very high proportion of Chardonnay and the ageing process offer remarkable finesse and elegance to this Champagne.

Ayala was founded in 1860 and such was their success they were invited as a foundation member of the "Syndicat des Grandes Marques" in 1882, an organisation restricted to the leading Houses. With fruit from Grand and Premier Crus Ayala has offered consistent style and quality and was purchased by Bollinger in 2005.

Ayala shares the same quality imperiative as Bollinger with wines of a different style. In its December 2006 edition the prestigious and influential French magazine "La Revue du Vin de France" selected Ayala Brut Majeur as a "Grand Vin" and included it (together with Bollinger Special Cuvee) in their Top 5 champagnes that illustrated the different styles of champagnes - Ayala being selected as being both an aperitif as well as for the table.
