Another cracker from the Katnook team renowned for their consistently good reds from Coonawarra. Founder?s Block is the introductory tier and is a good source of excellent value wines that are approachable, food friendly & more importantly gluggable. There has been a real effort to keep this wine ?real? with around a quarter of it finding it?s way into barrels to give the wine enough support & structure so it is not a fruit bomb. Ripe dark brambly blackberry, olives & a hint of mint chocolate that says ?Coonawarra?. It is dry, medium bodied with plush ripe fruit & soft tannins. Colour

Deep plum red with purple tinges.

Aroma

Enjoy the abundant and appealing dark berry fruits on the nose with ripe plum and hints of dusty mulberry. Subtle oak notes of vanillin complement the charming varietal aromatics.

Food Matching

This versatile and delicious wine will perfectly suita dish of butterflied quail, pan-fried in olive oil, garlic and rosemary. Strips of beef, wokfried in blackbean sauce and served with soba noodles

and Asian greens would also be a great accompaniment.

Winemaking Notes

Made using minimal oak maturation, approximately25% of the wine was matured in a combination of French and American Barriques, most of which were second use barrels.

Vintage Condition

2008 vintage will be remembered not only for its quality, but also the seasonal variability including a cool spring and one of the hottest periods recorded in early March. Although this accelerated maturities and harvest in many vineyards, the adverse effect on grape quality was negligible.

The following warm dry season produced higher than expected maturity levels with concentrated colour and tannins featuring in the ripe generous flavours. These attributes in the wines have since gained high praise and grown in stature.

This Cabernet Sauvignon features generous and rich fruit flavours of the vintage with excellent colour and fine tannins. It will be a great drinking wine for all occasions.

The Coonawarra wine region, Australia's "other red centre" is recognised world wide as producing exceptional Cabernet Sauvignon, as well as stylish Shiraz, Merlot, Chardonnay and Sauvignon Blanc.

Currently, over 5500 hectares are under vine in Coonawarra - with Cabernet Sauvignon and Shiraz accounting for 80% of plantings. 25% of wine produced in Coonawarra is exported.

The wines are shaped by the extraordinary terroir of Coonawarra - where the fabled Terra Rossa soils and cool maritime climate create the perfect wine grape growing environment.

Soil

Coonawarra's is famous for its prized Terra Rossa ( "Red Earth") soil. This rich, friable red loam vary from a few centimetres to a metre in depth and lie over a thin layer of calcareous matter, which in turn overlays a deep stratum of limestone. The cigar-shaped strip of Terra Rossa soil is only 12 km long and 2 km wide.  

Coonawarra appears completely flat, but in fact the red soil is situated on a slight but all important limestone ridge. The Terra Rossa soils are considered the best in the world for growing Cabernet Sauvignon.

Climate

Coonawarra is a cool wine region, with similar climatic conditions to Bordeaux, France. Both areas experience long but cool hours of sunshine during grape ripening - encouraging intense flavours balanced by good, natural acid.
