Palate
The aroma combines with delicate brioche characters and a naturally balanced acidity to produce this aromatic apertif style sparkling wine.
Winemaking Notes
The Chardonnay and Pinot Noir are harvested crushed and quickly chilled to ~4oC. The free run juice is gently pressed out and allowed to settle and clarify for 24-48 hours before racking. The juice is inoculated with carefully selected yeast to augment the flavours and aromas of each batch and allowed to ferment slowly at cool temperatures over several weeks to capture the crisp zesty flavours of Chardonnay and Pinot Noir. Each Chardonnay and Pinot Noir batch went through partial malolactic fermentation to give greater texture and balance the wines natural acidity with lees stirring to enhance the viscosity and richness of the base wines.
