A long, but wine-stained, cork had no adverse impact on the purple-red colour, nor the intense regional manifestation of the black fruits and bitter chocolate aromas and flavours; has very good length and intensity, French oak judged to perfection. It was a hard wine to coax forward but it got there in the end. This year’s Tatachilla Foundation Shiraz is a tight, tannic beast. It seems pongy at first but given air, I came to love the smell of this. It’s earthen and tobacco-like with notes of fresh, cedary sawdust and rich, blueberried fruit. In the mouth it’s velvety, strongly-flavoured, inky and quite dramatically tannic. It’s floral too, perhaps a touch gamey, and really big on fruit flavour. Winery Tasting Notes
Crimson red with purple hues.
Coffee, cinnamon, blackberry and earthy tones.
Intense red cherries and vibrant blackberry fruit flavours, aromas of cloves, black pepper and dark chocolate. Undertone aromas of Cilantro and oregano tannin structure is intense and melded with deep silky texture. Very long length on blackcurrant and liquorice notes.
Open one hour prior and serve at room temperature. The ideal accompaniment to full flavoured dishes such as braised confit or Faison.
This wine has superb ageing potential if carefully cellared.
A very good quality vintage in 2005; slightly early with a quick ripening period overall, especially for Shiraz.
The vintage was very dry with very little rainfall in February and very few days of rain in March. Mild conditions overall with temperatures rarely going over 25 degrees. The nights were cool, which allowed picking at optimum flavour development in the berry.
