A fine aromatic wine that displays lifted redcurrant, anise and dark chocolate aromas.
The Cabernet Merlot is true to Clare Valley style, showing rich texture and balance. A medium bodied palate reveals ripe blackberry and cassis coupled with fine grained sandy tannins and beautifully integrated French oak. A truly seamless wine possessing distinct Clare Valley style and poise.
This wine will reward ageing for up to 8 years.
The fruit for this wine is sourced from our own Yertabulti and Enterprise Vineyards . We also use a small number of carefully selected of carefully selected growers from a range of sites within the Clare Valley. The diverse range of vineyards contribute to the rich texture and flavours of the wine.
The wine was made with minimal intervention to preserve fruit purity. Fermentation occurred in static fermenters (potter) and open fermenters allowing for gentle extraction of flavours and texture through pumping over and hand plunging four times daily. The ferments lasted between 7-10 days. The skins were then pressed and wine allowed to settle before being transferred to barrel.
