The grapes were crushed to static fermenters with 5% whole bunches. They were cold soaked for two days and then inoculated with an active dry yeast strain. Pump overs were performed twice daily to extract colour and tannin. Ther ferment was maintain below 30 degrees to retain aromatics. The ferments were sugar dry after seven days and pressed to stainless steel tanks to settle. The wine was racked to French barriques off gross lees and allowed to naturally complete malolactic fermentaiton.
