Winery Tasting Notes
Intense blackcurrant and cherry fruits with lifted spice and fragrant poupourri scents.
Medium bodied with lively cherry, blackcurrant and fruitcake flavours with hints of spice. Luscious in texture with silky tannins and a long smooth finish.
Slow cooked lamb with chickpea salad and olive tapenade.
Grape: Merlot has its origins in Bordeaux, France and is the third most planted red variety in Australia. Merlot produces a wine with full plum and blueberry fl avours, softening on the finish. It is a vigorous variety with medium sized round black berries in loose bunches.
Fermentation: temperature controlled (20-28 degrees Celcius) with regular mixing to ensure full colour and fl avour extraction from the skins. Oak Maturation: two to five year old French and American oak for 13 months to impart chocolate, vanilla and spice flavours and soften the tannins in the wine. Of this blend, 30% was matured in stainless steel to retain the fruit’s fresh aromatics and vibrancy.
Vintage: Severe spring frosts recorded in late September 2007 resulted in widespread damage of emerging shoots on the estate and key source vineyards. Low yields combined with a warm, dry growing and ripening season resulted rapid and intense flavour accumulation with Merlot harvested two to three weeks earlier than usual.
Vineyard: Grapes for this wine are sourced from selected vineyards within Central Victoria including our own estate vineyard which provides the foundation for the wine’s varietal intensity. Close attention to canopy and yield management on an individual site basis ensure the fruit achieves full flavour expression.
