Winemaking Note

The approach to winemaking is all about protecting the grape's naturally aromatic characters. Gentle pressing to avoid any bitterness from the skins and minimal exposure to oxygen through the whole process ensure the retention of delicate fruit aromas and flavours. Fermentation is temperature controlled at 10 - 14 C in stainless steel, using yeast strains selected to optimise flavour development in the wine.
