The vineyards for Thomas Mitchell Cabernet Merlot are situated in regions renowned for classic red wine. Some of the fruit is sourced from the Goulburn Valley and Langhorne Creek where elegantly rich flavours develop through the combination of warm days and cooler nights. Each varieties strong classic characteristics are evident. The palate shows fresh herbs, balanced with rich textured blueberry, blackberry and freshly turned earth. Railing, supple tannins and a long sweet plum, velvety finish proffer up a well balanced treat.

Winery Tasting Notes

Cabernet Sauvignon is the second most planted variety in Australia and produces wine with blackcurrant flavour complexity, and firm lingering tannins. Merlot produces a wine with full plum and blueberry flavours, softening on the finish. It is a vigorous variety with medium sized round black berries in loose bunches.

Timely Spring rains and mild temperatures resulted in an even bud burst combined with generous fruitfulness. The summer months were generally dry, with two isolated (but significant) rain events – 50mm in mid December, and 80mm in the second week of February. The potentially threatening rains came to an abrupt halt before veraison and the ripening period was characterised by fine, sunny, warm days.

The wine is fermented in both static and rotary fermenters. During fermentation the must reached 28°C for colour, flavour and tannin extraction. This was then chilled to 20°C. After pressing, the wine is aged in oak for 10 months and then bottled prior to the next harvest.

Lifted dried herbs, spearmint and a doughy density lift with blueberry and fresh raspberry and cream. Each varieties strong classic characteristics are evident.
