Winery Tasting Notes
Lifted aromas of white nectarine and honeydew melon, supported by subtle spicy oak.
The initial freshness of stone fruits and melon moves into an extremely well rounded and complete mouth feel. The oak balance and acidity are seamlessly integrated to form a wine of real complexity and distinction. This culminates to offer subtle hints of lightly toasted almonds and a touch of minerality. Malo-lactic fermentation and battonage during extended lees contact has resulted in a creamy, elegant, and refined finish.
One of the strongest vintages in many years, allowed for the 2012 St Hilary Padthaway Chardonnay to displays intense regional stone fruit characters and richness of flavour. The wine is easily enjoyable now but will continue to evolve in the bottle and will reward those who carefully cellar it over the next 5 to 10 years.
