66% Pinot Noir, 34% Chardonnay.
Croser is a refined, aperitif style that is a reflection of the Piccadilly Valley in the Adelaide Hills. The palate is richly textured with a wonderfully fine and creamy bead, a Croser hallmark.
Handpicked bunches were chilled for 48 hours in small trays before whole bunch pressing extracting the delicate heart run juice of the grapes. The juice was fermented in a selection of old Vosges barriques with Petaluma's own selected yeast strain prior to partial malolactic fermentation. After two years on yeast lees the 2008 Croser will be disgorged with a dosage of 7gpl residual sugar.
All of the pinot Noir and chardonnay grapes for Croser are grown in Petaluma.s Piccadilly Valley vineyards at between 400 and 500 metres ASL, on the cool south and west facing slopes of Mount Lofty and Mount Bonython in the coolest viticultural region in South Australia.
