Grape Varietals

57% Chardonnay, 36% Pinot Noir, 7% Pinot Meunier.


An attractive pale straw colour with a green hue. The wine is showing a persistent fine, vibrant bead and gentle foaming mousse.


The bouquet displays complex layers of stone fruits, almond biscuit and yeasty characters derived from time on lees and aged reserve wine.


Elegant with a superbly fine and soft length.

Winemaking Notes

The 2006 vintage in Tasmania was warm and mild, producing exceptionally high quality wines. Vintage was a month earlier than usual at the Clover Hill site. All the grapes were gently whole-bunch-pressed, fermented in separate batches and underwent partial malolactic fermentation and batonnage in tank.

Clover Hill 2006 is crafted according to traditional methods. It is matured on lees in its bottle for a minimum 3 years. It contains components of selected reserve wines aged in French oak foudres and barrels to ensure the unique personality that is the Clover Hill house style.

Clover Hill was established in 1986 as a dedicated sparkling wine estate. The Clover Hill vineyard, located in the Pipers River region of north east Tasmania, has ideal climatic conditions and terroir to create Australia’s finest sparkling wine.

Planted solely to traditional sparkling wine varieties, Chardonnay, Pinot Noir and Pinot Meunier, considerable variation in the vineyard’s aspect and soil profile adds further complexity to the fruit sourced. Slow ripening conditions enable the grapes to develop a full flavour spectrum, resulting in a sparkling wine of richness, concentration and superb structure.
