Editor's Wine of the Week Most Aussie bubbles come in for around the $15 to $25 mark, giving them a big marketing edge over the French labels. But when you get around the $35 mark, you need to be producing a good drop if you hope to sell out. Tasmanian label Clover Hill is in that, category and the good news is they deserve to be. An attractive pale straw colour with a green hue. The wine is showing a persistent fine, vibrant bead and gentle foaming mousse. The bouquet displays complex layers of stone fruits, almond biscuit and yeasty characters derived from time on lees and aged reserve wine. Elegant with a superbly fine and soft length.
