This 2007 is not a hard wine to like. It’s beautifully structured. Beautifully fruited. Blackberries, cloves, eucalypt and integrated cedary oak. Indeed I kept coming back to this wine and admiring how fine and well managed it is. Near-perfect tannin set. Taltarni Heathcote Shiraz is cold soaked and fermented on skins for 11 days before undergoing malolactic fermentation in American hogsheads. It is then matured for 24 months in American oak. It is crafted to reflect the distinctive style of the Heathcote terroir and set to complement Taltarni’s great family of superb Victorian red wines.
