Winery Tasting Notes
Sourced from 70 year old vines on limestone soils directly to the north of the town itself. Rémi targets finesse and elegance, focussing on fruit expression rather than winemaking constructs or oak influence. Whole bunches are fermented with wild yeast before maturation in very tight grained Austrian oak, 40% new, chosen for the minimal character it imparts and all wines are bottled without filtration.
A difficult vintage that rewarded the diligent and brave vigneron. A very warm April was negated by a shockingly cold and wet summer. Consistent dry and windy conditions in late August saved the vintage and when the dust settled it was clear that 2007 was an excellent vintage for white Burgundy. The vintage will be characterised by finesse and elegance with pronounced mineral acidity. The wines will be delicate in their youth but beautiful in their purity and possess long ageing potential.
