Winemaking Note

The fruit is sourced from the lower slopes of the Château la Gaffelière vineyard, close to the winery. Harvested by hand before a full destalking.

A cold maceration is following by a cool fermentation and gentle cap punching, finishing in stainless steel. Maturation is in new French Oak.
