Winemaking Note

After hand harvesting in the vineyard, the fruit immediately undergoes soft, delicate pressing. The resulting must is transferred into heatconditioned tanks for static decantation. The clear must is divided into two lots, with the first seeing fermentation in steel vats at a low 18-20 degree temperature and the other in oak barriques in the winery’s underground cellar, seeing a maximum temperature of 20 degrees. After fermentation in barrel is completed it is left on lees until spring when the two lots are blended. A second fermentation takes place in the bottle where it is left for 5 years before release.

Vintage Condition

Four months of hot temperature and little to no rain saw the earliest harvest in Piedmont in 200 years. However, the weathers changed in September seeing coolers temperatures which balanced the acidity, sugar levels and aromatic profiles.
