Devil’s Lair has created Dance With the Devil; an intriguing blend of Sauvignon Blanc and Chenin Blanc. The palate weight and length of Chenin Blanc complements the tropical aromas and forward fruit flavours of Sauvignon Blanc. An ideal accompaniment to food.
Colour
Pale straw with wasabi green at the edge of the glass.
Aroma
Lifted lemon sherbet from the Chenin Blanc and subtle lychee from the Savvy are framed by the subtlest hint of old oak.
Palate
An intriguing white blend with Sauvignon Blanc’s upfront tropical flavours complemented by citrus and fresh herb notes. Chenin Blanc adds texture and length on the palate with honeyed fruit notes and racy acidity creating a long, clean finish.

About Devil's Lair
It seems that Devil's Lair was destined to be Margaret River's most mysterious and alluring estate. The name is taken from a local cave which itself was named after the Tasmanian Devil and where fossilised skeleton of a complete Tasmanian Tiger was found with a mysterious extra or fifth leg. To this day the exact location of the cave is a guarded secret.
Vineyard
Devil's Lair's Vineyards are approximately 17km south of the Margaret River township and are amongst the coolest and most southerly vineyard in the region. As such we are one of the latest wineries to harvest our fruit to allow full flavour development, but not excessive sweetness and alcohol.
Wines from the Devil's Lair label include the highly regarded Devil's Lair Margaret River Chardonnay, and the Devil's Lair Margaret River Cabernet Sauvignon.
The Environment
The natural environment is what makes Devil's Lair a unique place. To make the best possible wines and to safeguard the site for future generations, we work to preserve our water resource, our soil systems and the native biodiversity of the Estate.
"Sustainable viticulture is our guiding principle, a medium between conventional viticulture and organic viticulture. It influences the way we manage our ecology, our soil health, weeds, insects, disease and water." -Simon Robertson, our long time viticulturalist.
We avoid using chemical fertilisers, herbicides and chemical insecticides where possible. Now we use organic fertilisers such as basalt, carbon fines, seaweed based compost, natural rock phosphate.
The Devil's Lair Estate is only half planted to vineyards, the remainder is native bushland. We have undertaken revegetation programs to ensure regeneration of low lying flora and preserve and renew native species such as frogs, birds and insects.
