Discreet but not invisible wood highlights extremely pretty and relatively upper register red pinot fruit aromas that are liberally laced with earth and a hint of oak spice that precedes rich, round and quite supple medium-bodied flavors that are fresh and energetic on the palate staining finish.

Whilst no doubt destined for a long cellaring future, the 2008 Morey Saint Denis “Les Chaffots” is surprisingly and expressive in its youth – focussed around a core of rich fruit. Supple and concentrated with effortless power, it is the waves of flavours, structure and length that displays this wines pedigree.
Organically grown and hand sorted in vineyard and winery before 100% de-stemming. A long maceration and cold fermentation followed by fourteen months maturation in Francois Freres oak . Bottled without fining or filtration. In 2008, the length of time on skins was reduced and the ferments pumped over more than punched down.
For the second year in a row extremely challenging conditions were alleviated by consistently dry and warm conditions in late August. Low crop levels due to a cool and wet spring was further reduced due two hailstorms. Vineyard management was key – low yields, obsession to detail and the bravery to give the vines time to ripen. Frederic conducted rigorous sorting in the vineyard and again in the winery, with only a quarter of the fruit from some vineyards making the final blend.
