All fruit was taken in the dark of night with the juice racked, cold settled and then fermented to enhance complexity and fruit flavours. Half of the total blend was detained in barrel for fermention using 20 per cent new French oak, with the balance in second and third fill oak. Weekly stirring was undertaken for a seven month sentence before this elegant and flavoursome Chardonnay was deemed ready for release.

Beautiful fresh fruit aromas of rockmelon and sliced honeydew melon feature on this fruit driven nose. Complexity is added by the fresh vanilla yogurt and creamy notes arising from the sparing use of oak.
Melon characters of honeydew and rockmelon mix with intense flavours of white peach and citrus. Oak treatment has given this wine refinement and weight, while the natural acidity provides length and structure to this flavoursome drop.
