Overview

Single Vineyard wines epitomise the ultimate varietal expression of grapes grown on and selected from the most suitable rows of our family owned, mature and proven cool climate Western Australian vineyards. These wines are released only in years when we believe that this has been achieved.

A very classical style of wine that displays cool climate Shiraz notes of strawberries and other red berries with white pepper finishing with soft fine tannins.

Winery Tasting Notes

Aroma

Intense aromas of pepper, red berries and spice.

Palate

Rich and full of powerful red and black fruits with fine grained, firm tannins. With time this wine develops a unique honeycomb character.

Food Matching

Red game meats, lamb and rich beef dishes, grilled beef fillet with celeriac puree. Cheeses with more intensity like Gruyère or matured cheddars.

Cellaring Potential

While delicious to drink young for its primary fruit characters, this wine will gain in complexity with cellaring for up to 15 years.

Winemaking Note

All fruit is harvested from our Whispering Hill vineyard that is situated on ancient granitic soils in the truly cool viticultural region of Mount Barker. The wine was vinified using a selected Shiraz yeast in open fermenters under closely controlled conditions. Two weeks after fermentation the wine was pressed directly into French oak barriques. During 12 months in oak the wine was minimally handled, fined using egg whites and bottled with minimal filtration.

Capel Vale was established in 1974 by Sydney radiologist Dr Peter Pratten and his wife Elizabeth when they purchased land on the Capel River between Bunbury and Busselton in Western Australia’s South-West.

The site was originally a stone fruit orchard and its rich red alluvial loam soils over limestone made it a perfect viticultural site. It is also the location for the winery, cellar door and award winning restaurant.

After several vintages, it became apparent to Peter Pratten that the soils of the Capel area (now recognised as the Geographe region) were best suited to Chardonnay and Merlot. It became Peter's passion to determine the best region in South Western Australia for each premium grape variety. As a result Capel Vale has invested in prime viticultural land in Mount Barker for the production of Shiraz and Riesling, in Pemberton for Pinot Noir and Sauvignon Blanc and in Margaret River for Chardonnay and Cabernet Sauvignon.
