Sumptuous nose, pure dark berry fruit with hints of coffee and aromatic herbs. On the palate the full gamut of fleshy ripe berries unfold with bitter sweet flavours and it is enhanced by cinnamon spice and a layer of mocha. There is power, elegantly restrained and precisely defined, clean, dry and firm finishing with a touch of bitter chocolate." Winery Tasting Notes
Intense aromas of pepper, red berries and spice.
Rich and full of powerful red and black fruits with fine grained, firm tannins. With time this wine develops a unique honeycomb character.
Red game meats, lamb and rich beef dishes, grilled beef fillet with celeriac puree. Cheeses with more intensity like Gruyère or matured cheddars.
All fruit is harvested from our Whispering Hill vineyard that is situated on ancient granitic soils in the truly cool viticultural region of Mount Barker. The wine was vinified using a selected Shiraz yeast in open fermenters under closely controlled conditions. Two weeks after fermentation the wine was pressed directly into French oak barriques. During 12 months in oak the wine was minimally handled, fined using egg whites and bottled with minimal filtration.
A cooler vintage compared to the previous year. This cool turn during fruit set meant lower crop levels however Mount Barker experienced perfect ripening conditions during the summer. Steady ripening saw intense fruit flavours with delicacy and high natural acidity.
