Winery Tasting Notes

All fruit is harvested from our Whispering Hill vineyard that is situated on ancient granitic soils in the truly cool viticultural region of Mount Barker. The wine was vinified using a selected Shiraz yeast in open fermenters under closely controlled conditions. Two weeks after fermentation the wine was pressed directly into French oak barriques. During 12 months in oak the wine was minimally handled, fined using egg whites and bottled

with minimal filtration. The resultant wine is a superb example of Mount Barker Shiraz showing intense aromas of pepper, red berries and spice. The palate is rich and full of sweet fruit with fine grained, firm tannins. This powerful, elegant and complex wine will develop in complexity with 5 years of careful cellaring.

Capel Vale was established in 1974 by Sydney radiologist Dr Peter Pratten and his wife Elizabeth when they purchased land on the Capel River between Bunbury and Busselton in Western Australia’s South-West.The site was originally a stone fruit orchard and its rich red alluvial loam soils over limestone made it a perfect viticultural site. It is also the location for the winery, cellar door and award winning restaurant.
