Whole bunches of hand-picked fruit are gently pressed to ensure delicate flavours. After primary ferment the wine is tiraged with no malolactic fermentation and disgorged after 12 months to 18 months on yeast lees to retain crisp, fresh flavours.

"This is a bright and lively cool-climate sparkling that carries attractive freshness on the nose with bright apple fruit aromas and white floral notes. The palate’s zesty and crisp: more green apple here and a squeeze of lime citrus, finishing with gentle, fresh cashew-nut complexity."Nick Stock - The Age/Sydney Morning Herald Good Wine Guide 2012
