Restrained, tight and slightly herbal; it needs time to evolve and become more expansive. Dusty, almost leafy aromas of dark plums and berries backed by cedar/vanilla oak precede a firmish palate of full to medium weight. Underpinned by a drying cut of fine, chalky tannins, its pleasing length of reserved small black and red berry flavours are carefully knit with polished French oak. The core here is Coonawarra cabernet, with its characteristic fresh tobacco leaves over blackcurrants, mint and dark chocolate. There's a touch of Adelaide Hills cabernet and merlot, too, and some enticing nuances of bay leaves and olives. An elegant and refined style of Cabernet Sauvignon showing a complex amalgam of dark fruits, particularly cassis, with chocolate, mint, leaf, tobacco and sweet spice and cedary oak.
A mirror image of the bouquet with the hallmarks of chocolate and mint from the Coonawarra region balanced by the cassis and leafy characters of the Adelaide Hills. This wine shows great length of flavour, sweet fruit, finely honed tannins and a omplex oak background.

The 2006 Thomas Hardy Cabernet is crafted from our selection of the best Cabernet Sauvignon parcels across the viticultural regions of Australia. Two small vineyards in excess of 20 years old produced outstanding fruit with excellent flavour tannins and acid balance. The Coonawarra fruit is grown on the classical terra rossa soil which produces flavours of intense chocolate, mint and cassis whilst the Adelaide Hills fruit is finer, showing more acid and supple tannins. The combination of these wine regions produces a wine of refinement and elegance with rich flavours and length of palate.
