Colour

Brilliant pale yellow with vibrant green hues.

Aroma

Intensely fragrant with aroma’s of stonefruits. Toasty oak from partial barrel fermentation and maturation, with a creamy complexity that is derived from malolactic fermentation and aging on lees.

Winemaking Note

Fruit for this wine was selected on its intensity and presence yet still showing essential Chardonnay varietal characters. Upon delivery to the winery, fruit parcels were individually pressed and clarified. Fermentation was initiated with a selection of premium yeast strains. Cooler temperatures were maintained throughout to retain the fragrant aroma and flavour compounds. A variety of winemaking techniques were employed to build complexity and texture into the finished wine including extended yeast lees contact, French oak maturation, and malolactic fermentation. The use of free run juice exclusively, has produced a wine with a full flavoured soft palate, while extended lees contact has contributed a creamy mouth feel.

History

George Wyndham is one of the founding fathers of the Australian wine industry having planted Australia's first commercial Shiraz vineyard in 1830. Winemaker Nigel Dolan

Dolan is wine industry royalty of a kind; he has shaped palates of the globe and forged new paths for Australian wine with both winemaking and wine judging roles interwoven into his long career. Pivotal in his award winning career have been the two Jimmy Watson trophy wins in 1992 and 2003.

He was also named the 2009 Australian Winemaker of the Year by Winestate magazine, and has previously been named South Australian Red Winemaker of the Year, Barossa Wine Maker of the Year and been a finalist in the QANTAS Winemaker of the Year. In 2002, he earned the auspicious rank of "Baron of the Barossa".Throughout his career, Dolan has upheld a simple overriding philosophy of quality. Quality can take on many different guises and levels. He cites expressiveness, not just in winemaking, but expression of variety, vineyard, and region is the key to quality.
