Vineyards of Shiraz, Cabernet and Merlot were regularly monitored throughout the growing and ripening of the fruit to enable the winemakers to select the right combination of flavours for this wine. Each variety is fermented seperately on skins for five to six days at 20 - 22°C, this enables the rich flavours and colour to be extracted from the grapes.
