Winemaking Notes

The Chardonnay parcels for this wine had regular vineyard visits to ensure selection based on freshness and varietal expression. All fruit at optimal ripeness and quality was harvested in the cool of the night and transported to the winery. After crushing, pressing and clarifying the juice, it was then fermented in stainless steel tanks using neutral wine yeasts. Post fermentation the parcels went through partial malolactic fermentation and were cleaned up early to retain freshness prior to final filtration and bottling. There is no oak used throughout the winemaking process so we are totally reliant on the expression of the varietal flavours.
