Winery Tasting Notes

The Borgo Saletta is a true expression of the whole estate, encompassing a blend of predominantly Cabernet Sauvignon (65%) Cabernet Franc (20%) and Merlot (15%) from all vineyard sites. The focus is on fine tannins in order to provide more immediate drinkability. The wine is aged for just under a year in oak barrels that have already seen 1-2 years of use for Saletta, which contributes complexity without the greater definition of new oak.

Cellaring

Earlier vintages can benefit from a 5-10 year cellaring cycle but can also be enjoyed earlier.

Food Matching

The Borgo Saletta's slightly more fruit-forward character and medium structure is ideal for a wide range of main course dishes, including lighter meats such as chicken and veal. The wine can also be served at cellar temperature of 14 degrees C rather than ambient temperature. A short period of decanting is recommended, particularly for earlier vintages.
