A traditional, bottle fermented sparkling wine. A wine of rich Pinot Noir fruit, but showing elegance and finesse. It is full flavoured with a round middle palate and a finish of fresh, finely tuned acid. The traditional method sees classic varieties harvested early, blended and re-fermented in a bottle to capture the fine bubbles. Further maturation on fermentation lees produces characteristic yeasty aromas and flavours.

50.5% Pinot Noir, 48.5% Chardonnay
Rich in flavour with both finesse and elegance. We aim to bring out the best in our fruit by using techniques to let both the Chardonnay and Pinot Noir shine through. This wine has fresh citrus flavours with a soft creamy texture. A touch of oak has given this wine great structure and complexity.
Recommended to drink now. Further bottle age at this time will enhance and intensify the complex flavours.
